When it comes to comfort food from Kerala’s Malabar region, few dishes can match the charm of a soft, warm Orotti — a thick, flat rice bread that pairs beautifully with spicy curries, especially beef or chicken roast.
At Allay Foods, we celebrate such traditional recipes that speak to our culinary roots. Here’s how to prepare Orotti at home, using our premium-quality rice flour — finely milled for perfect texture and flavor.
🥣 Ingredients
2 cups Allay Rice Flour (roasted)
1 ½ cups water (adjust as needed)
Salt to taste
1 tsp coconut oil (optional, for softness)
Step-by-Step Preparation
1. Boil Water
In a pot, bring water to a gentle boil. Add salt and a teaspoon of coconut oil (optional).
2. Add Rice Flour
Reduce heat to low and gradually add the Allay rice flour, stirring continuously to avoid lumps. Mix well until a dough-like consistency forms.
3. Cool and Knead
Allow the mixture to cool slightly, then knead into a smooth, soft dough while still warm.
4. Shape the Orotti
Divide the dough into small balls and flatten each one into a thick, round disc — around ½ cm thick.
5. Cook
Heat a flat tawa or skillet. Cook each Orotti on medium flame, flipping until both sides develop light golden spots. No oil is required.
